A fast IPA to experiment with fruit!
Mash 144 oz (9 lb) Premium 2-Row Pale Malt and 16 oz (1 lb) Wheat Malt at 150°F for 60 minutes. Sparge and collect 6.5 gallons. Boil 60 minutes. Add 0.5 oz Magnum at 60 min, 1 oz Citra at 10 min, 1 oz Mosaic at 5 min. Cool to 95°F, pitch 1 packet Lallemand Voss Kveik. Ferment at 95°F for 3-4 days until final gravity is reached. Cool to 65°F, transfer to secondary, add 5-10 lbs fruit. Hold at 65°F for 1-2 weeks. Cold crash, package. Target OG 1.055 / FG 1.012 / IBU 28 / ABV ~5.6% (before fruit).
