Mash 160 oz (10 lb) Pilsner Malt and 16 oz (1 lb) Wheat Malt at 149°F for 60 minutes. Sparge and collect 6.5 gallons. Boil 60 minutes. Add 1.0 oz Hallertau at 60 min, 0.5 oz Saaz at 15 min. Cool to 60°F, pitch 1 packet WY2565 with 1 ml Lactic Acid in mash water. Ferment at 60–62°F for 10 days, then lager cold at 34–38°F for at least 2 weeks for a clean crisp finish. Package when bright. Target OG 1.046 / FG 1.010 / IBU 22 / ABV ~4.7%.
